I Quit Sugar “Hearty Bone Broth Vegetable Soup”

Due to popular demand from our recent I Quit Sugar Instagram takeover here is the recipe for our ‘Hearty bone broth vegetable soup’.  Enjoy!

 Ingredients 

  • A couple of teaspoons of extra virgin olive oil
  • 1 finely chopped shallot
  • 3 garlic cloves, minced
  • 1 Small fresh ginger grated (2 teaspoons)
  • 3 carrots, finely chopped
  • 3 cups spinach, roughly chopped
  • 6 cups of organic vegetable broth
  • 4 tablespoons of a quality bone broth
  • I large stick celery chopped
  • 1 can diced tomatoes
  • 2 sprigs fresh rosemary
  • 1 tablespoon fresh coriander
  • 1/2 cup uncooked quinoa, rinsed
  • 1 can chickpeas, drained and rinsed
  • Juice of 1 lemon

 

Directions

 

  • Sauté shallot, ginger and garlic in oil.
  • Then add diced carrots and cook for a further 3 minutes
  • Then add all other ingredients and simmer for 20 minutes
