Due to popular demand from our recent I Quit Sugar Instagram takeover here is the recipe for our ‘Hearty bone broth vegetable soup’. Enjoy!
Ingredients
- A couple of teaspoons of extra virgin olive oil
- 1 finely chopped shallot
- 3 garlic cloves, minced
- 1 Small fresh ginger grated (2 teaspoons)
- 3 carrots, finely chopped
- 3 cups spinach, roughly chopped
- 6 cups of organic vegetable broth
- 4 tablespoons of a quality bone broth
- I large stick celery chopped
- 1 can diced tomatoes
- 2 sprigs fresh rosemary
- 1 tablespoon fresh coriander
- 1/2 cup uncooked quinoa, rinsed
- 1 can chickpeas, drained and rinsed
- Juice of 1 lemon
Directions
- Sauté shallot, ginger and garlic in oil.
- Then add diced carrots and cook for a further 3 minutes
- Then add all other ingredients and simmer for 20 minutes
